<p>Riso con pasta sembra strano lo so! Ma guardatelo così: anche in cucina italiana ci sono dei piatti con 2 carbohidrati. Pasta e patate (e fagioli pure :D). È uno dei piatti tipici del capodanno Persiano!</p>



<p>Reshteh رشته in Persiano vuol dire: filli lunghi e nella cucina Reshteh si intende: pasta lunga/noodle. E si mangiava il <strong>Reshteh polo</strong> per <strong>capodanno</strong>! (il primo giorno di primavera) augurando che i nodi della vita che si sono fatti durante l&#8217;anno, si aprissero e che si risolvino.</p>



<p>Nel Reshteh polo le dimensioni della pasta sono piccoli (dovete romerli!) e corti perché si mangia meglio con riso e riso e fate conto che per mangiare, in Iran non si usa il coltello e forchetta ma cucchiaio e la forchetta! Qui seguo la ricetta di mia nonna che aggiungeva anche le lenticchie. Per occassioni formali e importanti come capodanno aggiungiamo anche la carne, che in questa ricetta lo farei perché lo sto proponendo per il capo d&#8217;anno persiano Nowruz نوروز</p>

Dopo 5 minuti è pronta.</span></div></li><li id="wprm-recipe-5068-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;"><strong>Reshteh</strong>: Dividete in 4 parti la pasta per riso, così si mescola meglio con i chicchi di riso</span></div></li><li id="wprm-recipe-5068-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;"><strong>Lavate bene</strong> il riso, finché acqua <em>non sia più torbid</em>a.</span><div class="wprm-spacer"></div><span style="display: block;">Aggiungetelo in acqua salata (come se fosse per la pasta) bollente (come la pasta).</span><div class="wprm-spacer"></div><span style="display: block;">Dopo 2 minuti appena acqua ricomincia a bollire aggiungete anche la pasta per riso, quando i chicchi di riso cominciano a <em><strong>salire</strong></em> <em>al superficie</em> e aumentano di volume e la pasta ammorbidita, scolate tutto. Ma salvate un mezzo bicchiere di acqua di cottura che ha in se l&#39;amido.</span></div></li><li id="wprm-recipe-5068-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Assembliamo nella pentola: In una <strong>pentola anti-aderente </strong>versate, mezzo bicchiere di <em><strong>acqua di cottura</strong></em><em> del riso</em> e 2 cucchiai di <strong>burro chiarificato. </strong>Appena mescolano per bene aggiungete gli ingredienti.</span></div></li><li id="wprm-recipe-5068-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Alternate <strong>uno strato di riso &amp; pasta</strong> (che va per primo) a <strong>uno strato di lenticchie</strong>, fino ad esaurimento degli ingredienti.</span></div></li><li id="wprm-recipe-5068-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Nell&#39;altra meta del acqua di cottura <strong>aggiungete</strong> 1<strong> noce di burro</strong>. Una volta sciolto <strong>versate il composto</strong> sulla pentola. Sopra il mix di riso/pasta e lenticchie perché non hanno nessun tipo di grasso.</span></div></li><li id="wprm-recipe-5068-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;"><em>Coprite il coperchio</em> della pentola con <strong>un strofinaccio pulito</strong> e cucinate a fuoco lento per <strong>1 ora. </strong>(nel fratempo preparate le guarnizioni che indico in seguito)</span></div></li><li id="wprm-recipe-5068-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Quando il riso si è leggermente dorato e staccato dai bordi della pentola, Reshteh polo è pronto! </span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Preparazione dei guarnizioni</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-5068-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;"><strong>La carne</strong>: tagliate a dadini (1 centimetro circa)</span><div class="wprm-spacer"></div><span style="display: block;">In una padella rosolate la cipolla in mezzo cucchiaio di burro chiarificato, appena diventa dorata aggiungete un pizzico di curcuma, mescolate per qualche secondo e aggiungete la carne. </span><div class="wprm-spacer"></div><span style="display: block;">Rosolato per qualche minuto, aggiungete 1 bicchiere di acqua e coprite con il coperchio e lasciate che cuoci per 30 minuti. </span><div class="wprm-spacer"></div><span style="display: block;">Appena si asciuga (importante perché non dovrà bagnare il riso per dopo) e la carne risulta morbida, aggiungete un pizzico di cannella e la noce moscata. Lasciate che cuoci ancora per qualche minuto ed è pronta.</span></div></li><li id="wprm-recipe-5068-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;"><strong>Mix di datteri e uvetta: Rosolate</strong> nell burro, <strong>datteri</strong> già tagliati in pezzi piccoli e denocciolati per 1 minuto poi aggiungete <strong>uvette </strong>e togliete dal fuoco dopo un minuto. </span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Come servire</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-5068-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Appena spegnete il fuoco di reshteh polo, prendete una grande piatto &#8211; piatto e svuotate la pentola creando una bella montagna sul piatto. </span><div class="wprm-spacer"></div><span style="display: block;">Prendete la corsta che si è formato da sotto con un cucchiaio adatto (attenti a non farvi bruciare le dite) e mettete la crosta/tahdig pezzettini e da una parte del piatto. </span><div class="wprm-spacer"></div><span style="display: block;">Mescolate 3-4 cucchiai di riso con lo zafferano sciolto prima e aggiungete sopra il riso nel piatto creando uno strato giallo</span><div class="wprm-spacer"></div><span style="display: block;">Mettete sia mix di datteri&amp;uvetta che la carne. Essendo tutti piccoli si mesconano bene fra loro e così si aggiunge un altro strato di guarnizione con colore diverso.</span></div></li><li id="wprm-recipe-5068-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">I commensali verrano serviti da questo piatto.</span></div></li></ul></div></div>

<p>Adas polo è una semplice piatto Persiano che è fatto di 2 ingredienti principali: le Lenticchie (<em>Adas</em>), Il Riso (<em>Polo</em>). Esistono diverse variazioni di Adas polo, o vegetariana o con la carne macinata. Questa è la ricetta vegetariana. Lo faccio spesso a casa perché è facile da fare.</p>



<p>Avrete bisogno di una <em>pentola antiaderente</em> con un <strong>fondo spesso</strong>. Perché se è sottile brucereste il riso e non avrete una buona crosta di riso al fondo di pentola.</p>

<li>La miscela di uvetta e datteri a volte viene servito da parte, perché alcuni commensali preferiscono il sapore -solo- salato. Quindi vengono messi in un piatto separato, chi vuole si serve. Nella mia famiglia piace a tutti, quindi ho messo sopra il riso.</li>

<p>Tahcin (ته‌چین) significa “adagiare sotto”, e in questo caso si intende la base della pentola in cui si cuoce il riso. Tahcin porta ad un altro livello la raffinatezza dei cibi sulla tavola. L’host cucinando Tahcin dimostra ai suoi ospiti quanto siano graditi per lui. In molte cerimonie ufficiali si cucina il Tahcin, ma è talmente buono che lo si può ordinare anche in alcuni ristoranti.</p>

<p>Esistono diversi tipi di Tahcin. Infatti, in alcune varianti, oltre al riso ci si aggiungono anche le melanzane, il pollo o lo stufato nel mezzo.&nbsp;La ricetta che prepareremo è quella più <em>semplice,</em> quella classica, fatta con gli ingredienti principali che non possono mancare nel Tahcin: zafferano, uova e yogurt. </p>

<li>La pentola per cuocere Tahcin dovrà avere un<b> fondo spesso</b> per diffondere al meglio il calore, senza bruciare il riso.</li>
<li>Potete anche cuocere Tahcin in padella antiaderente (con bordi bassi) mettendo solo il riso giallo. </li>
<li>A volte il Tahcin viene cucinato in contenitori di pyrex, <strong>al forno</strong>. Il vantaggio è che è possibile tenere sott’occhio la “<em>doratura</em>” del riso e decidere quando tirarlo fuori. </li>
<li>Lo yogurt greco che abbiamo usato per cuocere il Tahcin ha 5% di grassi (è quello di Fage Total) e ha anche meno <i>umidità</i> rispetto a quello di altre marche. </li>
<li>I tipi di riso che si possono usare per questo piatto sono: Basmati, Thai, Jasmin (L’importante è che siano Riso a <b>chicco</b> <b>lungo</b>).</li>
<li>Importante: il riso che userete non deve essere un prodotto pre-cotto o cotto in precedenza per altre ricette.</li>
<li>Tahcin servito con il pollo bollito in salsa di pomodori e crespini (<a href="https://piattipersiani.com/pollo-iraniano-o-zereshk-polo-morgh/">zereshk polo</a>) è un classico ma può essere accompagnato anche da <i>stufati classici iraniani</i> o con lo <i>spezzatino di carne</i> o i <i>bolliti o con gli stufati vegetariani.</i></li>

<p>Lo Sholezard è un dolce molto popolare in Iran, preparato soprattutto per le celebrazioni religiose, i cosidetti <em>Nazri</em> (usanza popolare che consiste nel distribuire piatti tipici alla gente comune gratuitamente)</p>



<p>Una volta avevo postato su Instagram la foto del risotto alla milanese e molti amici Iraniani pensavano che avessi cucinato lo <em>Sholezard</em>! : )&nbsp;</p>

<li>Se non trovate l&#8217;acqua di rose, usate l&#8217;olio/essenza dei fiori. </li>

<p>La Halva è un tipico dolce Medio orientale. Ci sono tante varietà di halva, dal nord Africa all’India. Ogni paese ha la sua versione, anche l’Iran ha la sua. La Halva Persiano è fatta di pochissimi ingredienti. Il processo di preparazione è talmente semplice che se non viene eseguito meticolosamente, si può rovinare tutto e sarà anche costoso. (ho già fatto e pagato <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f641.png" alt="🙁" class="wp-smiley" style="height: 1em; max-height: 1em;" /> )</p>



<p>L’ingrediente speciale di questa ricetta è <strong>l’acqua di rose</strong>. Quest’ingrediente è una prelibatezza. È un ingrediente naturale che si ottiene dalla distillazione delle rose ed è senza alcun additivo o conservante. È senza colore ma ha un profumo pazzesco. Quando lo comprate fate attenzione che sia <em><strong>commestibile</strong></em>!</p>



<p>In Iran usiamo  <strong>l’acqua di rose</strong> per i pasti, dessert, bevande quindi si va sul sicuro. In Italia invcece, ho notato che l’acqua di rose viene utilizzata più in Ayurveda, prodotti di bellezza, etc.</p>

<li class="li1"><span class="s2">Fate molta attenzione a scegliere <strong>la padella giusta</strong> per preparare la Halva. Una padella che sia di un materiale tipo rame, ferro o acciaio, perché la temperatura della padella aumenta tantissimo durante la tostatura della farina e se è fatta di Teflon o di materiale chimico può diventare cancerogeno.</span></li>
<li class="li1"><span class="s2">La Halva viene servita a temperatura ambiente o leggermente calda. Si può tranquillamente conservare in frigo. Prima di servire, scaldatela in padella.</span></li>
<li>? <span class="s2">Un tempo, lo zucchero non era qualcosa disponibile a tutti. Si usava la melassa di uva che ha un colore molto oscuro. In questa ricetta, vanno benissimo i zuccheri non filtrati come Muscovado. Io ho usato metà mucovado e metà zucchero integrale. </span></li>
