<p>È una confettura molto popolare in Iran. Ricordo che da  bambina i fruttivendoli a Tehran, durante l’autunno, erano pieni di mele cotogne. Le ritenevo parecchio brutte ma nonostante questo, a casa, la confettura di mele cotogne andava a ruba <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f600.png" alt="😀" class="wp-smiley" style="height: 1em; max-height: 1em;" /> </p>



<p>È dolce ma con un retrogusto aspro! E per prepararla avrete bisogno solo di 3 ingredienti: mele cotogne, zucchero e acqua. Il quarto ingrediente invisibile (come in tutte le altre pietanze persiane) è&nbsp; il <em>tempo:</em> 3-4 ore. Se non altro, non dovrete stare in piedi per tutto il tempo, ma solo dare una mescolatina ogni tanto. La procedura è simile a quella di ogni altra confettura del mondo.</p>

<p>?La differenza fra confettura Italiana e quella Persiana è nel texture/la struttura. <em>Morabba</em> (in persiano, confettura) è un composto di frutta e il suo sciroppo, non una crema spalmabile. Ma se preferite che lo sia, frullate la confettura quando è ancora calda, con un frullatore a immersione, fino ad ottenere una consistenza omogenea.&nbsp;</p>



<p><strong>Importante</strong>: non buttate via i semi perché hanno delle sostanze gelatinose naturali.</p>



<p>A casa mia è una tradizione fare la confettura di mele cotogne ogni autunno. Vi svelo un piccolo segreto di famiglia! La cuciniamo sempre in pentole che <strong>non</strong> siano di <strong>acciaio</strong>, perché pare che queste conferiscano un colore marrone oscuro al composto. </p>



<p>Sarebbe preferibile utilizzare una pentola di <strong>rame</strong>, ma va bene anche una <strong>antiaderente</strong> o di <strong>ghisa</strong>.&nbsp;La confettura che vedete nella foto l’ho preparata in una pentola antiaderente <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> </p>
