<p>Quando mia nonna cucinava <em>Koofteh (kufteh/kuftah) baghali</em> (polpette di fave) tutta la famiglia si univa nel weekend (il venerdi) per gustare il piatto d&#8217;autore della nonna. Erano polpetti verdi serviti con un po&#8217; di cipolle cotte nell&#8217;acqua di cottura. </p>



<p>La stagione delle fave è a metà primavera &#8211; inizio estate. La gente ne compra a chili e li conserva, sbucciati, in congelatore per gustare i vari piatti fatti con le fave per tutto l&#8217;anno.</p>



<p>Koofte/polpette di fave è una delle ricette popolari del centro dell&#8217;Iran, la regione Isfahan.</p>
