<p>La Halva è un tipico dolce Medio orientale. Ci sono tante varietà di halva, dal nord Africa all’India. Ogni paese ha la sua versione, anche l’Iran ha la sua. La Halva Persiano è fatta di pochissimi ingredienti. Il processo di preparazione è talmente semplice che se non viene eseguito meticolosamente, si può rovinare tutto e sarà anche costoso. (ho già fatto e pagato <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f641.png" alt="🙁" class="wp-smiley" style="height: 1em; max-height: 1em;" /> )</p>



<p>L’ingrediente speciale di questa ricetta è <strong>l’acqua di rose</strong>. Quest’ingrediente è una prelibatezza. È un ingrediente naturale che si ottiene dalla distillazione delle rose ed è senza alcun additivo o conservante. È senza colore ma ha un profumo pazzesco. Quando lo comprate fate attenzione che sia <em><strong>commestibile</strong></em>!</p>



<p>In Iran usiamo  <strong>l’acqua di rose</strong> per i pasti, dessert, bevande quindi si va sul sicuro. In Italia invcece, ho notato che l’acqua di rose viene utilizzata più in Ayurveda, prodotti di bellezza, etc.</p>

Versate lo sciroppo e mescolate tutto lentamente. <li class="li1"><span class="s2">Fate molta attenzione a scegliere <strong>la padella giusta</strong> per preparare la Halva. Una padella che sia di un materiale tipo rame, ferro o acciaio, perché la temperatura della padella aumenta tantissimo durante la tostatura della farina e se è fatta di Teflon o di materiale chimico può diventare cancerogeno.</span></li>
<li class="li1"><span class="s2">La Halva viene servita a temperatura ambiente o leggermente calda. Si può tranquillamente conservare in frigo. Prima di servire, scaldatela in padella.</span></li>
<li>? <span class="s2">Un tempo, lo zucchero non era qualcosa disponibile a tutti. Si usava la melassa di uva che ha un colore molto oscuro. In questa ricetta, vanno benissimo i zuccheri non filtrati come Muscovado. Io ho usato metà mucovado e metà zucchero integrale. </span></li>

<p>Completate la decorazione con le fette di mandorla e pistacchio grattugiato sopra. La Halva Persiano è servito con il Chai (Té) nero. Se ci unite anche il <a href="https://piattipersiani.com/pane-barbari-nun-barbari/">pane Barbari</a> è la fine del mondo. ?</p>
