<p class="wp-block-paragraph">Khoresh Fesengian è uno dei piatti più antichi dell’Iran perché fatto con prodotti tipici del territorio: le <strong>noci</strong> e il <strong>melograno</strong>. Fesengian, con pochi ingredienti, ha un sapore così ricco e sofisticato, che di solito viene cucinato per eventi formali e celebrazioni.</p>



<h3 class="wp-block-heading">Due modi in mancanza del concentrato di melograno</h3>



<p class="wp-block-paragraph">1- Usate la <em>melassa</em> di melograno che si trova in commercio. Mettetene 1 cucchiaio in più di quanto riportato nella ricetta) </p>



<p class="wp-block-paragraph">2- Preparatelo voi in casa: fate bollire il succo fresco di 4-5 melagrane, finché non si riduce a 1/5.</p>

<h3 class="wp-block-heading">Quali tipi di carne</h3>



<p class="wp-block-paragraph">Se la ricetta di Fesengian sulla salsa alle noci e melograno è abbastanza rigida, sulla parte proteica regna la democrazia. Infatti, potete scegliere la carne che preferite, basta che sia di terra: pollo, anatra, coniglio, manzo, agnello.&nbsp;Se siete vegani anche il Tempeh (mai provato però). </p>



<p class="wp-block-paragraph">La ricetta tradizionale Iraniana prevede o pollo, o anatra o la carne macinata di agnello in forma di polpettine (<em>kufteh ghelgheli</em>) da soffriggere prima di aggiungere allo stufato.</p>

<li>Durante la cottura non ci va olio di nessun tipo.</li>
<li class="p1">A metà cottura,se spegnete il fuoco e lasciate che raffreddi un po’ lo stufato, quando riaccendete, le noci lasceranno ancor più olio.</li>
<li>Se mettete le polpette di carne prima rosolate in un altra padella poi aggiungete quando la salsa alle noci e melograno è a meta cottura.</li>

<p class="wp-block-paragraph">Come tutti i <em>khoresh</em> (stufati), <em>Fesengian</em> viene servita con il <a href="https://piattipersiani.com/riso-basmati-semplice-stile-kateh/" target="_blank" rel="noreferrer noopener"><span style="text-decoration: underline;"><strong>riso basmati</strong></span></a> semlice. Leggermente decorato con lo zafferano, come accompagnamento andrebbero bene l&#8217;insalata per dare un tocco di freschezza.</p>

<p class="wp-block-paragraph">Per cucinare Ghormeh sabzi, avrete bisogno di molta pazienza perchè ci vorranno <em>almeno</em> <em>2 ore</em>. La ricetta comprende due ingredienti <em>essenziali</em> che danno l&#8217;autenticità al piatto:</p>



<ul class="wp-block-list"><li> Il <strong>Fieno greco</strong> in foglie, ma va bene anche i semi, però dovete utilizzare molto meno perchè hanno un sapore deciso e amaro. </li><li><strong>Limoni essicati</strong>: sono limoni iraniani con una pelle molto sottile che danno un profumo unico al piatto. Se non li troverete ci accontentiamo anche del succo di limone o lime. </li></ul>

<p class="wp-block-paragraph">Come vedete questo stufato è grasso quindi per bilanciare i sapori ci vuole un tocco aspro di limone. ?</p>

<p class="wp-block-paragraph">p.s. <strong>i limoni secchi </strong>sono molto profumati, ma troppo forti per essere mangiati. Però si lascia comunque, dentro il piatto da qui viene servito, ha un effetto estetico ma anche c&#8217;è chi vuole mangiare più aspro, quindi lo può prendere e premere con la forchetta dentro il suo piatto per far uscire il suo sapore. (nella mia famiglia ci sono quelli che mangiano volentieri i limoni secchi e sono anche contenti di non avere dei rivali ?)</p>

<p class="wp-block-paragraph">È uno dei stufati principali (<em>Khoresh</em>) della cucina Persiana. Le melanzane sono un ingrediente popolare in Iran. Molti anni fa, quando sono venuta in Italia, la vista delle melanzane così tonde e cicciotte era un pò scioccante per me. Perché in Iran si usa solo le melanzane lunghe e sottili, perciò, per avere un sapore più <em>autentico </em>(se ci sono), scegliete quelle lunghe.</p>



<p class="wp-block-paragraph">Questo stufato viene servito con il <span style="text-decoration: underline;"><strong><a href="https://piattipersiani.com/riso-basmati-semplice-stile-kateh/">riso basmati</a></strong></span> quindi cominciate parallelamente anche con la preparazione del <span style="text-decoration: underline;"><strong><a aria-label="riso (opens in a new tab)" rel="noreferrer noopener" href="https://piattipersiani.com/riso-basmati-semplice-stile-kateh/" target="_blank">riso</a></strong></span>.</p>

<li>Unica difficoltà di questo piatto è che <strong>le melanzane dopo ore di cottura</strong>, diventano molto morbidi MA devono <strong>mantenere loro forma intera</strong>. Se aggiustate il sale fine della cottura, state attenti di mescolare piano lo stufato.</li>
<li>Per farlo meno pesante, invece di friggere io lo metto al forno e il risultato non è da meno! <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> </li>

<p class="wp-block-paragraph">Gheimeh è lo stufato più popolare del Iran. Perchè tutte le famiglie lo preparano, almeno una volta alla settimana, facile da preparare ed è sempre un piacere a mangiarlo sia per pranzo che cena <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f600.png" alt="😀" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p class="wp-block-paragraph">Attenzione che nel mercato ci sono 2 tipi di legumi:<em> i piselli gialli spezzati</em>, <strong><em>i ceci gialli spezzati</em></strong>. È importante che usiate quest&#8217;ultimo. Perchè dovrebbe tenere la sua forma fino la fine della cottura al contrario di ceci, i pisellli si sfaldano subito. In Iran si usa solo i ceci spezzati che lo chiamiamo Lappe (لپه) </p>



<p class="wp-block-paragraph">Questo stufato viene servito con <strong><a href="https://piattipersiani.com/riso-basmati-semplice-stile-kateh/"><span style="text-decoration: underline;">il riso basmati</span></a></strong> quindi è meglio che parallelamente, cominciate a prepararlo. (senno è buono anche con la focaccia!)</p>
